The salt itself is Cargill's Alberger-process (flake) salt (formerly known as the Diamond Salt Company), produced in St. Clair MI--the only place where it is made in the US. The salt is quite different than table salt (cubic crystals) in that its crystals are pyramidal and somewhat hollow before being ground into very fine flakes--about 130 million flakes per pound and appears much like flour. The flakes adhere to foodstuffs much better than do large table-salt cubes, so less of this type of salt is needed, which reduces sodium intake.Alberger salt flakes dissolve in water three times faster than table salt, making it ideal in somewhat dry baking mixes and for cooking. Myself, I use this salt for most everything that uses table salt.The Premier Flavacol brand uses riboflavin for imparting its yellow color--no artificial yellow food dyes. I have purchased both the 45-pound quantity that comes in a plastic pail and 50-pound boxes of the stuff for refilling the pail.When used with popcorn, place the salt in the kettle along with the seeds and (coconut) oil.
